Easter, in Sardinian Sa Pasca Manna, or “big Easter”, to represent the very important role that this celebration plays in the Sardinian culture (just think that Christmas celebrations are instead called Sa Paschixedda, or “little Easter”) is one of the most anticipated holidays on the island, a moment in which spirituality, tradition and conviviality intertwine in a unique atmosphere of meditation and introspection, of joy and collective celebrations.

In the middle of Holy Week, in Sardinian Sa Chida Santa, cities and villages of the ancient island of Ichnusa transform into stages to revive ancient rites, handed down for generations over the centuries. Events that tell the story of the people’s intense bond with the religion, and at the same time offer a precious opportunity to take on a journey into the deepest sardinian culture, where sacred merges with folklore and the sense of community manifests in acts full of symbolism, pathos and even mystery.

The Easter processions, enriched by ancient liturgical songs in Latin and Sardinian and by people wearing traditional costumes, do not only celebrate the Resurrection, but represent the perpetuation of a custom that continually renews, preserving the essence of an identity rooted in millennia of history, cultural fusion and evolution. The first is the “Mysteries” (or Misterius in Sardinian), a tradition that comes to life every year on Holy Tuesday which sees hundreds of hooded men dressed in white, usually barefoot, walk the streets of the main cities and villages to commemorate the seven most significant events of the Passion of Christ. No less touching is the ritual of the deposition from the cross, known as Su Scravamentu, which takes place on the evening of Good Friday. A solemn and pathos-filled moment in which the statue of Christ is symbolically taken off from the cross, in a gesture of profound devotion that, in silence and respect, reveals the humanity and the intimate, personal bond of each believer with the divine, with the strength of faith and collective compassion.

Finally, a prominent place among Easter celebrations, both spiritually and culturally, goes to S’Incontru, the reenactment of the meeting between Mary and risen Christ, a representation full of details that comes to life in the morning of Easter day with two separate processions, one led by the statue of Jesus and the other by Holy Mary veiled in black, that travel through the central streets of towns until they meet in the main square. At the meeting moment, the veil of mourning is removed from Mary’s statue and the festive sound of the bells marks the beginning of Easter joy, in a reconciliation of Christ with the divine.

Main dishes of Sardinian Easter: a journey of authentic flavors, traditions and rebirth icons

Easter in Sardinia, as a manifestation of great religious faith, represents also an unmissable opportunity to explore local culture through its food. Sardinian Easter table is indeed rich in delicious dishes, each with specific and profound meaning, related to material and spiritual sense of rebirth and prosperity.

One of the most iconic preparations of the Easter holidays is Coccoi cun s’ou, a semolina bread, crunchy on the outside and very soft on the inside, finely decorated with shapes that range from simple braids to real works of art that depict elements of nature, like leaves and flowers or delicate animals shapes like doves and sheep, which hides a hard-boiled egg in the inside, symbol of rebirth and fertility, hope and abundance, life that in its infinite cycle never shuts down. It’s interesting to note that, when it wasn’t yet customary giving a chocolate Easter egg, that we all know nowadays, children were instead gifted with this special bread, shaped into the most imaginative forms. Assemini’s one, for example, combines the flavor of eel with the delicate and “soft” taste of potatoes, while Sassari’s version features the rich flavor of pork. Easter lunch in Sardinia is usually based on roast lamb, slowly cooked with Mediterranean herbs such as myrtle, rosemary and bay leaves. The tender and fragrant meat tells about the sardinian pastoral history and the deep bond with the land.

We then find pardulas campidanesi (which change name depending on the area, becoming casadinas in Nuoro and formaggelle or ricottelle in Sassari), small round cakes filled with ricotta or sheep’s cheese, enriched with egg yolks, citrus peel and sometimes saffron. Not only a pleasure for the taste, but a symbol of life and rebirth: the name of these delicacies recalls, in fact, the figure of women giving birth. Cannonau, the most famous local red wine, perfectly accompanies the dishes of this holiday thanks to its warm and intense flavor, a real treat for the taste and the spirit. After lunch, it is then traditional to sip a glass of myrtle, an iconic liqueur made from the infusion of the berries of the namesake plant, very popular throughout the island, with its unmistakable aromatic taste.
